Bon Chon Chicken!

Had lunch at Bon Chon Chicken, where they prepare their fried chicken South Korean-style. The result is super-crispy and dry (not greasy). You bite into a drumstick, and . . . WHAT THE! There's a gap between the paper-thin, crispy skin and the meat. What's missing is the fat. I don't know whether it's cooked away or become part of the meat (that would explain the moistness, though), but it's not there. Excellent variation on fried chicken. Pickled radish on the side really was nice.
